I also boil the chickpeas for about 12 mins. It removes many of the jackets and it is a softer texture. This is absolutely delicious and fresh tasting. No need to limit to the summer months. I even make this before Christmas for a lighter meal.

I've only recently got an air fryer and haven't tried them yet but they should be ok. You won't need to precook the potatoes though and you might need to reduce the aquafaba a little to stop it running through the holes. You would also need to be careful about not overloading it so you can turn them all easily. They don't get as crisp as with oil so might break a bit. Or you could skip the aquafaba and use a tablespoon or 2 of oil instead.

The flavors and textures of this dish are great. My only suggestion is to heat up the topping and serve on the fries right when they come out of the oven so the whole thing is hot. I enjoyed this dish even more when it was served warm. The only reason I gave this dish 4 stars instead of 5 is because it is so much better served hot.

Good for you! This is a great recipe to start with as who doesn't like fries? And they are so tasty. As for the crema, you could use silken tofu instead of the cashews, blended with a little non-dairy milk, the lime and seasoning to taste. Add the milk gradually so you get the right consistency. Silken tofu makes great silky smooth sauces. You will find it in the fridge with the other tofus at the store and it is usually in a tetra pack rather than plastic wrapped like the others.
