This is an older recipe and my baking has evolved. I don't often use flax as a binder anymore. This recipe is actually on my list to update to my new and better method but will need testing first. It's fine like this but could be even better.
Until I change it, follow it as it is as it will probably need a little tweaking. Or make the strawberry muffins and replace the strawberries with blueberries and the strawberry jam with blueberry jam ;O)

I make 7 large instead of 12 small... 375 for 20 mins.
Amazing base recipe for all kinds of muffins. I didn’t like the blueberry but I added 1 1/2 cups of chopped apples, some walnuts and cinnamon and OMG.
NEXT I’m trying carrots and allspice.

I don't care for these at all. I wish I would have adjusted it as I thought it was a lot of baking powder, baking soda, and salt. I can taste the baking powder/baking sodium flavor.

▢ 1½ teaspoons baking powder
▢ 1½ teaspoons baking soda (bicarbonate of soda in the UK)
▢ 1 teaspoon fine salt

These were awesome! I was out of eggs & thought I would try! I used 1 cup white whole wheat flour & 1 cup oat flour, 1/2 cup of cane sugar & 1/4 cup coconut sugar, & these are awesome! Most of my blueberries were frozen & I had a few fresh leftover. Cooked these exactly as it said & second time 19 minutes!

Aquafaba won't work as a replacement for oil and give a good result in this recipe. It needs some fat. You could use the same amount of nut butter and blend it with the milk before you start. That works really well but they won't be quite as light and fluffy. If you do that the flavour of cashew butter is best because it's so neutral and creamy and won't come through in the finished muffins like peanut butter or almond butter will.
